Tabbouleh

Lebanese salad made with bulghur wheat, tomato, cucumber, onions, parsley and mint and seasoned with lemon juice and olive oil.

Ingredients

  1. 200g bulgar wheat
  2. 4 medium tomatoes, finely diced
  3. half a cucumber, finely diced
  4. 5 spring onions, thin slices
  5. large bunch of parsley, finely chopped
  6. Small bunch of mint, finely chopped
  7. Zest of 1 lemon
  8. 4 tbsp olive oil
  9. 2 tbsp lemon juice
  10. 1 garlic clove, minced
  11. 1/2 tsp Lebanese 7 spice powder
  12. Salt and pepper
  13. 1 egg white
  14. 1 tsp cornflour
  15. 175g plain flour
  16. 100ml vegetable oil

To serve:

  1. Lettuce leaves
  2. Barbequed meat or fish

Directions

  1. Cook the bulgar as per instructions.
  2. Whisk lemon juice, olive oil and garlic for 1 minute.
  3. Place the bulgar in a bowl with the all of the ingredients and stir well to combine.
  4. Season to taste and serve on top of lettuce leaves with your choice of barbequed or grilled meat or fish.
